The opening of the Culinary Institute at David Posnack Jewish Day School has been an astounding success. The food tastes delicious, looks appetizing, and all the chefs are extremely excited to have the opportunity to work there. This new facility is much more than simply a dining hall. The chefs at the Culinary Institute are planning on offering cooking classes, which students will be able to take as an elective. The chefs receive feedback from the students and staff, tailoring the menu so they can serve with the interests of the students and staff.

As head chefs, Anthea Ponsetti and Emmanuel Codron hold the honor to be able to produce healthy and creative meals for the children and staff. Anthea has been cooking since the age of 5 and grew up in a family where everyone in the household cooked. She has used her long history of cooking to perfect the meals served daily here at Posnack. The chefs work every day of the week from 7 A.M.-3 P.M., committed to creating a healthy menu. It typically takes 2 days to prepare the meals, one for planning and one for cooking.

As a kosher kitchen, the food they serve must come from various certified kosher vendors. Produce is bought from the local farmer’s market, meat and fish from kosher distributors, and other items from different locations. Ponsetti and Codron said it is difficult working in a kosher kitchen due to the school’s policy of following Judaism’s strict kashrut laws. Some challenges the chefs have faced include having to be more creative because of kashrut and lack of variety in the meals they can produce. This new dining hall is a massive success, pleasing everyone who has had the luxury of dining there.
